A vibrant Mediterranean salad with ripe tomatoes, crunchy cucumber, tangy feta, and a zesty herb-infused olive oil vinaigrette.
Ingredients
500g ripe tomatoes, halved
1 large cucumber, peeled and sliced
150g feta cheese, crumbled
1/2 small red onion, thinly sliced (optional)
1 cup black olives, rinsed
4 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp fresh herbs (oregano, parsley, mint)
Salt and fresh pepper
Instructions
1. Wash tomatoes and cucumber. Halve or dice tomatoes, peel and slice cucumber.
2. Soak thinly sliced red onion in vinegar for 5 minutes to reduce sharpness.
3. Toss all ingredients in a bowl.
4. Whisk olive oil, vinegar, herbs, salt, and pepper for dressing. Drizzle over salad.
Notes
Use seedless cucumber if preferred.
Add lemon juice for extra brightness.
