Description

A comforting French quiche with crispy pastry, tender spinach, and creamy goat cheese. Perfect for lunch or dinner, shared with family.


Ingredients

Scale

1 sheet of shortcrust pastry
400g spinach (fresh or frozen, thawed and drained)
200g goat cheese
3 large eggs
200ml heavy cream
100ml milk
1g garlic (optional, minced)
1 tbsp olive oil
Salt to taste
Ground black pepper
Pinch of nutmeg (optional)


Instructions

Preheat oven to 190°C (375°F)
Roll out dough into a circle and fit into a fluted quiche tin
Line with parchment paper and fill with pie weights or dried beans
Bake 15 minutes while preparing filling
Sauté spinach with garlic in olive oil until wilted (if using fresh)
Beat eggs, cream, milk, and seasonings
Stir in crumbled goat cheese and spinach
Pour mixture into the cooled crust
Return to oven without pie weights
Bake 30-35 minutes until set
Cool 10 minutes before slicing

Notes

Use frozen spinach for best results
Let quiche rest 20 minutes after cooling for clean slices
Store leftovers in fridge airtight up to 3 days
For halal: verify butter/pastry doesn’t contain animal stock
