Description
A springtime classic with a crisp pie crust, tender asparagus, and creamy goat cheese. This French-inspired quiche is easy to make and perfect for meals from breakfast to dinner.
Ingredients
1 store-bought or homemade pie crust
300–400 g fresh asparagus, trimmed and cut into 2–3 cm pieces
150 g goat cheese (fresh or semi-dry)
3 large eggs
200 ml heavy cream or whole milk
100 ml whole milk
1 tbsp olive oil
1 minced clove garlic (optional)
Salt and freshly ground black pepper
Instructions
Remove pie crust from refrigerator and press into a buttered tart pan with fork pricks. Chill while preparing filling.
Blanch asparagus in olive oil or water until just tender. Reserve some whole tips for garnish if desired.
Whisk eggs, cream, milk, salt, and pepper. Stir in crushed goat cheese and cooked asparagus.
Pour filling over prepared crust, sprinkle reserved whole asparagus tips if desired. Bake at 190°C (375°F) for 40 minutes or until set. Let cool slightly before serving.
Notes
For quicker prep, use a store-bought pie crust
Optional: Add 1 tbsp fresh chives or thyme for extra flavor
