Ingredients
3 courgettes, medium size
2 large tomatoes, ripe
1 onion, aromatic
2 garlic cloves

Freshly ground black pepper, to taste
Instructions
Wash and slice courgettes into 0.5 cm rounds (keep skin on for texture)
Blanch and peel tomatoes, then dice into chunks
Finely chop onion, mince/grind garlic
Heat 2 tablespoons olive oil in a skillet over medium heat
Cook onion and garlic until golden (5-7 minutes)
Add courgettes and a pinch more oil. Sauté until tender (8-10 minutes)
Incorporate tomatoes, Herbes de Provence, remaining oil, salt, and pepper
Simmer gently for 5-7 minutes until tomatoes soften
