Description

1 kg fresh cherries (with pits)
4 medium eggs
250 ml milk (whole or semi-skimmed)
150 g granulated sugar
100 g all-purpose flour (type 45 or 55)
Butter for greasing the mold
Pinch of salt
1 teaspoon vanilla extract, optional


Instructions

Preheat oven to 180°C (350°F)
Wash and dry cherries thoroughly, removing stems. Place them in an oven-proof dish and gently press the pits into the cherries using a fork to prevent them from falling out during mixing
In a large bowl, whisk eggs until pale and slightly foamy
Add sugar and salt to the eggs, whisking until fully dissolved
Pour in milk and continue whisking to blend
Gradually mix in sifted flour, ensuring no lumps remain
Stir in vanilla extract if using
Butter the dish thoroughly to prevent sticking
Pour the batter over the cherries in the dish
Bake for 40-50 minutes, or until the custard is golden and a toothpick inserted in the center comes out clean
Let cool slightly before serving
