Ingredients
1 cup (150 g) dark chocolate pâtissier, chopped
1/3 cup (100 g) unsalted butter, frozen into dice
1/3 cup (100 g) granulated or brown sugar
2 large eggs, room temperature
2 2/3 cups (70 g) all-purpose flour (sifted)
1 tablespoon (10 g) unsweetened cocoa powder (optional)
1 pinch of salt (about 1/4 teaspoon)
Instructions
Preheat oven to 180°C (Thermostat 6). Butter and flour a 20×20 cm square baking pan or line with parchment paper
Melt chocolate and butter: In a heatproof bowl, combine chopped chocolate and frozen butter dice. Place over a pot of simmering water (or microwave in 30-second intervals) until smooth and homogeneous
Whisk eggs with sugar and salt in a separate bowl until slightly pale
Pour warm chocolate mixture over egg mixture and gently fold until fully combined
Slowly incorporate sifted flour into the chocolate-egg mixture, blending until no dry spots remain
Optionally add 1 tablespoon of cocoa powder for intensified flavor. Mix thoroughly
Transfer batter to prepared pan and smooth the surface
Bake for 25-30 minutes until set but visibly puffy in the center
Cool completely in the pan before cutting into 9 brownies

Use quality 70%+ cocoa dark chocolate for best flavor
For extra fudgy texture, avoid overmixing after adding flour
Optional cocoa powder adds cost-effectiveness and can substitute additional dark chocolate
