Ingredients
1.25 pounds (600g) boneless, skinless chicken breasts, cut into 2-inch cubes
1/3 cup (80ml) extra virgin olive oil
2 tablespoons dried Herbes de Provence (thyme, rosemary, oregano)
2–3 cloves garlic, minced
1 tablespoon fresh lemon juice (about half a lemon)
Salt, to taste
Freshly ground black pepper, to taste
8–10 wooden or metal skewers
Instructions
Prepare chicken cubes and soak wooden skewers in water for 30 minutes
In a large bowl, mix olive oil, Herbes de Provence, garlic, lemon juice, salt, and pepper
Add chicken cubes to marinade and coat evenly
Refrigerate for 30 minutes to 2 hours
Thread marinated chicken onto skewers
Preheat grill to medium-high heat
Grill skewers for 10-12 minutes per side, or until chicken is fully cooked
Notes
Metal skewers can be used without pre-soaking
For extra flavor, baste skewers with marinade while grilling
