Ingredients
500 g fresh strawberries
250 g mascarpone
150 ml heavy cream
3–4 tablespoons powdered sugar
1 teaspoon vanilla extract (optional)
Fresh mint leaves for garnish
Instructions
Wash and hull strawberries; cut large ones in halves or quarters. Set aside with some whole strawberries for decoration.
In a bowl, gently mix mascarpone with powdered sugar and vanilla extract (if using) until smooth.
Froth heavy cream with an electric mixer until soft peaks form.
Layer strawberries, mascarpone, and whipped cream in verrines. Garnish with whole strawberries and mint leaves.
