Ingredients
Fresh strawberries, 3 cups (500g), halved or quartered
Mascarpone cheese, 1 cup (250g)
Heavy (whipping) cream, ½ cup (100ml)
Powdered sugar, 3-4 tablespoons (30-40g)
Lemon juice, 1 tsp (optional)
Fresh mint leaves, for garnish
Crumbs of spiced shortbread (optional)
Remaining whole strawberries for garnish
Instructions
Wash strawberries and slice large ones
Chop shortbread into coarse crumbs
Whip mascarpone with powdered sugar
Gently fold in whipped cream
Layer mascarpone mixture and strawberry halves in glasses
Chill at least 1 hour
Garnish with mint leaves, reserved strawberries, and optional crumbs
Notes
Use under-ripe strawberries with extra sugar for balance
Chill at least 30 minutes before serving
