Ingredients
1 rolled pâte brisée (homemade or store-bought)
500g ripe tomatoes (preferably Roma or Cœur de bœuf)
2 medium eggs
200ml crème fraîche
2 tablespoons Dijon mustard or mustard à l’ancienne
1 tablespoon olive oil
Salt to taste
Freshly ground black pepper to taste
1 crushed clove of garlic, optional
A pinch of herbs de Provence, optional
Instructions
Preheat oven to 180°C (thermostat 6)
Roll out or place the pâte brisée into a greased tart mold; prick the base with a fork
In a bowl, whisk together eggs, crème fraîche, mustard, olive oil, garlic, herbs de Provence, salt, and pepper
Pour the mixture into the tart shell
Arrange thinly sliced tomatoes in rows over the filling
Sprinkle with a little additional salt and pepper
Bake for 30-35 minutes until the filling is set and the pastry is golden
Let cool slightly before slicing and serving
