Description
A rustic French fruit tart featuring a buttery puff pastry base layered with fresh strawberries and a light sugar glaze. Perfect for showcasing spring’s sweet jewels.
Ingredients
Puff pastry (store-bought or homemade, 24-26 cm diameter)
500g fresh strawberries (ripe, slightly firm)
2–3 tablespoons powdered sugar
20g unsalted butter, softened
Optional: confectioners’ sugar for dusting
Instructions
Preheat oven to 180°C (Thermostat 6)
Unroll and shape puff pastry into a 24–26cm tart pan
Prick pastry base with a fork multiple times
Wash and hull strawberries, cutting larger ones in halves or quarters
Arrange strawberries in overlapping rows on the pastry
Dot with butter pieces and sprinkle with powdered sugar
Bake 20–25 minutes until strawberries are tender and pastry is golden
Let cool before serving, optionally dust with confectioners’ sugar
Notes
Adjust sugar to taste based on berry sweetness
Add 1 tsp vanilla extract for extra flavor
Use sugared strawberry halves as garnish if desired
Store in an airtight container at room temperature for up to 2 days
