Ingredients
1 kg ripe tomatoes (type Roma preferred), fresh or canned (chopped or peeled)
3 to 4 tablespoons extra virgin olive oil
1 medium onion, finely chopped
2 to 3 garlic cloves, finely chopped or crushed
1 teaspoon Dijon mustard
1 tablespoon red wine vinegar
1 teaspoon sugar, optional
1 teaspoon Provencal herbs (or fresh thyme, bay leaf, rosemary)
Salt to taste
Freshly ground black pepper
Instructions
Prepare ingredients: If using fresh tomatoes, blanch in boiling water, shock in ice water, remove skins and seeds
Heat olive oil in a large saucepan over medium heat
Sauté onions until softened (5-7 minutes), add garlic; cook 2 minutes
Add tomatoes with their juice, Dijon mustard, red wine vinegar, and sugar
Stir in herbs, salt, and pepper
Simmer uncovered 45-60 minutes, stirring occasionally, adjusting seasoning as needed
Blend to desired consistency (optional) with an immersion blender or standard blender
Notes
Use canned tomatoes for faster preparation (no need to blanch)
Storage: Refrigerate 4-5 days in airtight container or freeze in portioned bags up to 6 months
Add a pinch of cinnamon for a surprising depth of flavor
