Ingredients

1 medium onion, finely chopped
2 garlic cloves, minced
2 tablespoons olive oil
400 g tomato puree
60 ml apple cider vinegar (or white vinegar)
60 ml honey, maple syrup, or brown sugar
1 tablespoon Dijon mustard
2 tablespoons non-alcoholic Worcestershire sauce (optional)
1 teaspoon Provence herbs
1 teaspoon smoked paprika (optional)
Pinch of salt
Pinch of freshly ground black pepper


Instructions

Sauté onion and garlic in olive oil until softened
Add tomato puree and stir
Mix in vinegar, sweetener, mustard, and spices
Simmer at medium heat for 20-25 minutes
Adjust seasoning to taste
Blend until smooth (optional)

Substitute sweetener based on taste
Omit paprika for non-smoky version
