Ingredients

6 to 7 large ripe tomatoes, cut into chunks
1 large firm cucumber, peeled and diced
200 g feta cheese, crumbled
1/2 red onion, thinly sliced
1/4 cup black olives (Kalamata or Nicoise)
6 tablespoons extra virgin olive oil
3 tablespoons lemon juice (or red wine vinegar)
1/4 cup fresh herbs (oregano, parsley, or basil), chopped
Salt to taste
Freshly ground black pepper


Instructions

Wash and dry all vegetables.
Chop tomatoes into bite-sized pieces and set aside.
Cut cucumber into similar-sized dice.
In a large bowl, combine tomatoes, cucumbers, and red onion slices.
Purchase crumbled feta cheese and add it to the bowl.
Rinse and add black olives to the salad.
Fold in fresh herbs just before serving.
Drizzle with olive oil and lemon juice.
Season lightly with salt and black pepper (adjust based on feta saltiness).
Serve immediately, chilled or at room temperature.
