Ingredients
1 kg heirloom tomatoes (mixed colors and varieties)
4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar or balsamic vinegar
1 large bunch fresh herbs (basil, parsley, chives, oregano), finely chopped
1 garlic clove, finely chopped or halved
Salt (adjust to taste)
Freshly ground black pepper (adjust to taste)
Instructions
Wash and dry the tomatoes thoroughly.
Cut the tomatoes into quarters, thick slices, or cubes depending on size. Place in a large salad bowl.
Add chopped garlic to the bowl.
In a small bowl, whisk together olive oil, vinegar, herbs, salt, and pepper to make the vinaigrette.
Toss the tomatoes gently with the dressing until well combined. Taste and adjust seasoning.
Chill for 10-15 minutes before serving to enhance flavor absorption.
