Description
A comforting, refreshing French salad with firm potatoes, fresh herbs, sweet apples, and tender canned tuna. Perfect for family picnics or a no-fuss meal that evokes childhood memories of sunlit meals in southern France.
Ingredients
1 kg firm potatoes (like Charlotte or Belle de Fontenay)
2 (200g) cans of tuna in natural brine, drained
2 small apples (Golden or Gala)
½ white or red onion, finely chopped
4 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 cup mixed fresh herbs ( parsley, basil, thyme, or chives)
Salt and freshly ground black pepper
distilled vinegar (optional, for brightness)
2–3 hard-boiled eggs (optional)
Instructions
1. Wash potatoes and cut into 2cm chunks
2. Boil in salted water until tender (20-25 mins)
3. Cool slightly, then slice into bite-sized pieces
4. Dice apples and toss in lemon juice to prevent browning
5. Finely chop herbs; mix with olive oil, vinegar, mustard, and salt/pepper
6. Combine potatoes, apples, onions, and dressing in a bowl
7. Add drained tuna and herbs
8. Chill for at least 30 minutes before serving
9. Top with crumbled hard-boiled eggs if using
Notes
Use champagne vinegar for a lighter flavor
For extra texture, add buttery chickpeas
