Ingredients
1 kg potatoes (firm flesh, such as Charlotte or Belle de Fontenay)
1 apple (slightly tart variety, e.g., Granny Smith or Golden)
3 tablespoons extra virgin olive oil
2 tablespoons vinegar (wine, cider, or sweet balsamic)
1 small red onion or shallot, finely chopped (optional)
1 handful fresh herbs (parsley, chives, tarragon, chervil, or mix)
Salt and freshly ground black pepper, to taste
Instructions
Boil potatoes in salted water until tender (20-25 minutes). Drain and let cool.
Dice cooled potatoes into cubes. Core and finely dice the apple.
In a large bowl, combine cooled potatoes, apple, and chopped onion (if using).
In a small bowl, whisk together olive oil, vinegar, salt, and pepper. Drizzle over the potato mixture.
Add washed and chopped fresh herbs, then toss gently until evenly coated.
Chill in the refrigerator for 30 minutes before serving for best flavor.
Notes
Chill for at least 30 minutes to let flavors meld.
Use a mix of fresh herbs for complexity.
Store leftovers in an airtight container for up to 2 days.
Optional: Add a squeeze of lemon juice instead of vinegar for a lighter flavor.
