Description
A comforting, nostalgic potato salad with tender vinaigrette-dressed potatoes, crispy apple slices, and aromatic herbs. This light, fresh dish is perfect for family meals or picnics and requires no special ingredients.
Ingredients
1 kg small new potatoes or firm potatoes
2 apples (Gala or Golden)
4 tablespoons extra virgin olive oil
2 tablespoons vinegar (wine, cider, or balsamic)
1 small bunch fresh herbs (parsley, chives, tarragon, chervil)
½ red onion (optional, finely chopped)
1 tablespoon capers (optional)
Salt to taste
Freshly ground black pepper to taste
Instructions
Wash potatoes (no peeling if small and new). Cut into medium pieces
Wash apples, core, and cut into thin slices or small cubes
Boil potatoes in salted water until tender (15-20 minutes). Drain and cool slightly
Toss potatoes with olive oil, vinegar, herbs, salt, and pepper
Add apple slices and stir gently
If using, fold in red onion and/or capers
Let rest for 10 minutes before serving
Notes
Use fresh, high-quality olive oil for best flavor
Adjust vinegar type to your taste (balsamic adds a sweet tang)
For vegan version, substitute capers with pickled vegetables
