Ingredients
500 g fresh green beans
4 tablespoons olive oil
2 tablespoons vinegar (wine, balsamic, or cider)
1 bouquet fresh herbs (persil, ciboulette, basil, or mint)
1 small red onion (optional)
1 small garlic clove (optional)
Salt to taste
Freshly ground black pepper
Instructions
Trim and rinse green beans under cold water
Chop red onion (if using) and mince garlic (if using)
Finely chop herbs
Combine olive oil, vinegar, herbs, garlic, salt, and pepper in a bowl
Sauté green beans in a pan with 1-2 tablespoons of vinaigrette until tender (10-15 minutes)
Toss cooked beans with remaining dressing
Let rest 15 minutes before serving
Notes
Add cherry tomatoes or feta cheese if desired
Use a mix of fresh herbs for more complex flavor
