Description

A fragrant Provençal-inspired salad blending ripe strawberries with refreshing fresh mint and a light olive oil vinaigrette. Perfect as an appetizer or side dish for a refreshing, no-cook option that highlights seasonal produce.


Ingredients

300g fresh strawberries
1 bunch fresh mint leaves (1015 leaves)
3 tablespoons extra virgin olive oil
12 tablespoons non-alcoholic white balsamic or cider vinegar
Optional: 1/2 teaspoon powdered sugar (adjust to taste)
Optional: 2-3 sprigs of basil, chives, or flat-leaf parsley


Instructions

Wash strawberries under cold water and remove stems. Halve or quarter medium-sized strawberries.
Rinse mint leaves, separate from stems, and finely chop (reserving a few small leaves for garnish).
In a bowl, combine strawberries, chopped mint, and optional herbs.
Drizzle with olive oil and vinegar. Gently toss to coat.
Sprinkle with sugar if using.
Serve chilled, garnished with reserved mint leaves.
