Ingredients
1 roll (about 200g) store-bought pâte brisée
3 large eggs
0.85 cup (200 ml) heavy cream
1/3 cup (100 ml) whole milk
Salt, to taste
Freshly ground black pepper, to taste
Pinch of ground nutmeg
1 1/2 cups grated cheese (e.g., Gruyère, cheddar)
1/2 cup vegetarian bacon cubes (optional)
1 cup cooked vegetables (e.g., leeks, mushrooms, spinach, cherry tomatoes)
1 tbsp olive oil (if sautéing vegetables)
Instructions
Preheat oven to 350°F (180°C). Butter and flour a 9-inch tart or flan mold.
If using leeks or mushrooms, sauté them in olive oil until tender and moisture evaporates. Let cool.
Grate cheese and cut vegetarian bacon into cubes.
In a bowl, whisk eggs with cream, milk, salt, pepper, and nutmeg.
Press pâte brisée into the mold. Layer cheese, sautéed vegetables, and/or vegetarian bacon.
Pour egg mixture over the filling. Bake for 30-35 minutes until golden and firm. Let stand 5 minutes before slicing.
Notes
Use ready-made pâte brisée for faster prep.
Let quiche cool slightly for cleaner slices.
