Description
A hassle-free, creamy quiche without a crust, featuring Mediterranean-inspired flavors and a soft, custardy texture. Perfect for weeknights using seasonal vegetables, cooked chicken, or cheeses.
Ingredients
3 large eggs
20 cl heavy cream or whole milk
10 cl whole milk or low-fat milk
200 g main ingredient of choice (cooked vegetables like spinach, zucchini, leeks; cooked chicken; or 50-100g shredded cheese)
50–100 g grated cheese (Gruyère, Emmental)
1 tsp herbs de Provence or fresh herbs (chopped)
Salt and pepper to taste
Butter or olive oil for greasing
Instructions
Preheat oven to 180°C (350°F)
Grease a 25cm (10-inch) pie dish with butter or olive oil
In a bowl, whisk eggs, cream, and milk
Add herbs, seasoned with salt and pepper
Stir in drained cooked vegetables, shredded chicken, or additional cheese (if using)
Pour mixture into prepared dish
Sprinkle remaining cheese on top
Bake 35-40 minutes until set and lightly golden
Notes
Substitute lardons with cooked mushrooms or extra vegetables for a vegetarian version
For a protein boost, add 100g shredded cooked chicken
Quiche keeps in fridge for 2-3 days in an airtight container
Serve warm or at room temperature with a green salad
