Ingredients
Pâte brisée (halal version), 1 roll
Fresh spinach or frozen and thawed, 500g
Goat cheese bûchette, 150g
Eggs, 3
Heavy cream, 200ml
Whole milk, 100ml
Olive oil, 1 tablespoon
Garlic clove, 1 (optional)
Salt, to taste
Freshly ground black pepper
Nutmeg, a pinch (optional)
Instructions
Preheat oven to 180°C
Wash and cook spinach in olive oil with optional garlic until wilted
Squeeze out excess moisture and roughly chop spinach
Roll out pâte brisée and fit into greased tart mold
Trim edges and prick base with a fork
Beat eggs, mix with cream and milk
Add crumbled goat cheese and chopped spinach, season with salt, pepper, and nutmeg
Pour mixture into prepared crust
Bake for 35-40 minutes until golden and set
Notes
Can be prepared ahead of time and stored in fridge
For crisp pâte, chill the crust before baking
Use Gouda or cheddar as halal cheese alternatives if needed
