Description

A traditional French side dish that highlights the natural sweetness of green peas. Lightly sautéed with butter, a touch of sugar, and shallots, then paired with crisp lettuce for a refreshing crunch. A comforting, colorful accompaniment ideal for family meals.


Ingredients

1 kg shelled green peas (frozen is acceptable)
1 head crisp lettuce (e.g., romaine), finely chopped
1 shallot or green onion, thinly sliced
20 g unsalted butter
1 tsp granulated sugar
Salt, to taste
1 pinch white pepper
100 ml water or vegetable broth


Instructions

Preheat stove to medium-low and place a saucepan over it.
Add butter and let it melt gently.
Sauté shallot (or green onion) for 2-3 minutes until tender.
Stir in peas, sugar, salt (if using), and white pepper.
Pour in water or broth, then cover and simmer slowly for 8-10 minutes until peas are tender but not limp.
While peas simmer, finely chop lettuce into a bowl.
Once peas are done, remove from heat and cool slightly.
Fold in chopped lettuce and serve warm for a springtime dish or chilled as a refreshing side.

Notes

For best results, uncover and gently stir the peas during the last 2-3 minutes to prevent sticking.
If using frozen peas, do not thaw before cooking.
Use vegetable broth instead of water for a richer flavor.
Lettuce can be substituted with fresh herbs like dill for a different twist.
