Description

This homemade pâte brisée delivers a crisp, buttery base ideal for tarts, quiches, and pastries. Quick to prepare and adaptable to both sweet and savory fillings, it’s a versatile kitchen staple.


Ingredients

Scale

250g all-purpose flour
125g cold butter, cut into cubes
5 cl (3 tablespoons) cold water
1 pinch coarse salt
Optional: freshly ground black pepper


Instructions

In a large bowl, mix the flour and salt. Add pepper if desired.
Add cold butter cubes to the flour mixture. Work with fingertips until the texture resembles coarse sand (sablez).
Gradually add water (about 3 tablespoons) and mix with a fork. Form the dough into a ball by hand. Wrap and rest for 30 minutes.
Flatten the dough with a roller and press into a tart pan after chilling.

Notes

Use cold ingredients for optimal texture
Resting allows gluten relaxation for easier rolling
For a meat pie base, add a yolk and 1-2 tbsp water per flour for extra firmness
