Ingredients
250g all-purpose flour
125g cold butter, cut into small cubes
50ml very cold water
Pinch of salt
Optional: ground black pepper for a subtle flavor in savory versions
Instructions
Mix flour and a pinch of salt in a large bowl. If preparing for savory fillings, add a pinch of black pepper.
Add cold butter cubes to the flour.
Using fingertips, rub butter into the flour until the mixture is coarse and granular, with visible butter bits (sablage).
Create a well in the center and gradually add cold water.
Gently mix with a fork or fingers until the dough comes together.
Wrap and refrigerate for 30 minutes before rolling out.
Notes
Ensure butter is very cold for optimal texture.
Chill the dough before rolling to prevent spreading while rolling.
Use as a base for quiches, savory tarts, or sweet pies.
