Description

Ingredients

Scale

4½ cups all-purpose flour (500g)
1 cup warm water (250ml)
1½ tsp fresh yeast (15g) or 7g dry yeast
2 tbsp olive oil
1 tsp salt
1 pinch sugar (optional)


Instructions

Dissolve fresh yeast in warm water with a pinch of sugar; let rest 5–10 minutes.
In a large bowl, add flour, create a well, and add salt on one side.
Add the yeast water mixture and olive oil to the well.
Mix with a wooden spoon, then knead until smooth and elastic (10–15 minutes).
Let the dough rest in a warm place for 1 hour until doubled in size.
Divide into 2 large or 4 medium pizza portions. Roll out and top as desired.
Bake at 450°F (230°C) for 10–12 minutes until golden and crisp.

Notes

Use T00 flour for a finer crumb if available.
Warm water (not hot) ensures optimal yeast activation.
For a lighter crust, let the dough ferment overnight in the fridge.
