Ingredients
2 cups all-purpose flour
3/4 cup sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
2 large eggs (room temperature)
7/8 cup softened butter
1 cup milk
1 cup dark chocolate chips
Pinch of salt
Instructions
Preheat oven to 180°C (Thermostat 6) and prepare a muffin tin with paper liners
In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt until homogeneous
In another bowl, beat eggs, add softened butter and milk, blending well
Pour the wet ingredients into the dry ingredients and mix until just combined
Fold in chocolate chips gently so some remain intact
Spoon the batter evenly into muffin cups (about 3/4 full)
Bake for 20-25 minutes until a toothpick comes out with a few moist crumbs
Notes
Use room-temperature eggs for better emulsification
Don’t overmix the batter to maintain a soft texture
Let muffins cool slightly in the tin before transferring to a wire rack
Store in an airtight container at room temperature for up to 2 days
