A velvety, cloud-like chocolate mousse with intense flavor and silky texture. Perfectly balanced between richness and lightness, this no-bake French classic pairs melted dark chocolate with whipped eggs and cream for a guilt-free indulgence. Serve chilled with fresh berries.


Ingredients

Scale

200g high-quality dark chocolate (50%+ cacao)
4 large eggs (separated)
50g powdered sugar
100ml heavy cream
1 pinch of salt


Instructions

Melt chocolate in a heatproof bowl over simmering water, stirring until smooth
Separate egg whites and yolks
Whip egg whites with 15g sugar and salt until stiff peaks form
Beat egg yolks with remaining sugar until creamy
Gently fold whipped egg whites into yolk-sugar mixture
Whip heavy cream until stiff; fold into chocolate mixture
Pour into ramekins, refrigerate 2 hours before serving

Notes

Add a splash of orange blossom water to melted chocolate for floral notes
Use a candy thermometer when melting chocolate to avoid burning
Optional garnish: fresh berries or chocolate sauce
