Ingredients
200g dark chocolate with at least 70% cacao
150g softened butter (preferably salted for subtle saltiness)
150g powdered sugar
3 large eggs
80g wheat flour (T45 or T55)
1/2 teaspoon baking powder (optional, for more lightness)
Instructions
Preheat oven to 350°F (180°C)
Grease and flour a 20 cm (8-inch) baking mold. For added chocolate flavor, dust the mold with cocoa powder instead of flour.
In a heatproof bowl, melt the chocolate and butter using a double boiler or microwave in 1-minute intervals, stirring until smooth and glossy.
Whisk the eggs and powdered sugar in another bowl until pale and thick, about 3 minutes.
Gently fold the melted chocolate-butter mixture into the egg-sugar mixture.
Sift in the flour and optional baking powder, then mix until homogeneous.
Pour the batter into the prepared mold, leveling the surface.
Bake for 20-25 minutes until the center is warm and slightly jiggly in the middle.
Allow to cool slightly before cutting into pieces and serving warm.
Notes
Adjust the sugar if using a sweeter chocolate, reducing by up to 50g.
The slight saltiness of the butter complements the chocolate, but regular butter can be used.
For a richer flavor, substitute flour with cocoa powder when preparing the mold.
Store leftovers in an airtight container at room temperature for up to 2 days.
