Ingredients

3/4 cup vegetable oil (sunflower or canola)
1 egg yolk (room temperature)
1 teaspoon Dijon mustard
2 tablespoons white wine vinegar or apple cider vinegar
1 pinch salt
1 pinch black pepper


Instructions

Ensure all ingredients are at room temperature. In a bowl, whisk together the egg yolk, mustard, vinegar, salt, and pepper.
Using a hand whisk or electric mixer on low speed, add the oil in a slow, steady stream while continuously whisking. Begin with individual drops at first, then gradually increase the flow as the mixture emulsifies and thickens.
Stop when the mayonnaise reaches a creamy, spreadable consistency.

Notes

For best results, use a blender or emulsifier stick for consistency. Store in an airtight container in the refrigerator for up to 3 days. Adjust salt and vinegar to taste.
