Ingredients
150g all-purpose flour (Type 45 or 55)
3 large eggs
100g granulated sugar
100g unsalted butter, melted and slightly cooled
1 tsp baking powder
1 tsp vanilla extract or lemon zest
A pinch of salt
Instructions
Melt the butter gently in a saucepan or microwave, then let it cool slightly
Whisk eggs with sugar and salt until pale and frothy
Gradually add sifted flour and baking powder to the egg mixture
Stir in cooled melted butter and vanilla extract (or lemon zest)
Let the batter rest for 20 minutes to allow flavors to develop
Preheat oven to 190°C (375°F) and prepare a well-seasoned madeleine pan
Fill each mold 2/3 full with batter
Bake for 10-12 minutes until golden and the scallop shell pattern forms
Cool in the pan for 5 minutes before transferring to a wire rack
Notes
Use non-stick madeleine molds or parchment paper for best results
Gently grease molds with butter and dust with flour for perfect release
The “scallop shell effect” appears more pronounced when the batter is slightly chilled before baking
