Ingredients
1 rouleau pâte brisée (homemade or store-bought)
3 large eggs
20 cl crème fraîche épaisse (30% MG)
150 g smoked turkey strips (halal)
1 small onion, finely chopped (optional)
A pinch of grated nutmeg
Salt, to taste
Freshly ground black pepper, to taste
Instructions
Preheat oven to 375°F (190°C)
Place the pâte brisée in a greased tart pan and press to fit the mold
Prick the bottom of the crust with a fork to prevent over-bubbling
Optional: sauté the sliced onion in the turkey fat until translucent
In a bowl, whisk together eggs, crème fraîche, nutmeg, salt, and pepper
Add the cooked turkey strips (and onions) to the crust and pour the egg-cream mixture over the top
Bake for 45 minutes, or until golden and set
Let cool slightly before serving in slices
Notes
Substitute smoked turkey with diced halal-certified chicken or other non-pork alternatives.
If using store-bought crust, check the ingredients for animal-based fats and confirm it’s halal.
For a vegetarian version, omit meat and double the onion/vegetables.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Use parchment paper as a base for even baking if not using a traditional tart pan.
