A luxuriously smooth chocolate mousse made with rich dark chocolate, silken egg whites, and whipped cream. A timeless French dessert offering a balance of depth and airiness, perfect for celebrations or family gatherings.
Ingredients
200g dark chocolate (50%+ cocoa)
6 large eggs, separated
80g powdered sugar
100ml full-fat cream (30% fat)
1 teaspoon vanilla extract (optional)
Instructions
Melt chocolate in a microwave or bain-marie until smooth, then let cool slightly.
Separate egg whites into a clean bowl; reserve yolks.
Chill cream until firm, then whip to soft peaks.
Whisk yolks into tempered chocolate with a spatula until homogeneous.
Beat egg whites with a pinch of salt and sugar until stiff peaks form.
Fold whipped whites into chocolate mixture in thirds, reserving a third.
Gently incorporate chilled whipped cream into the chocolate-egg white blend.
Chill in refrigerator for at least 3 hours before serving.
Notes
Use a candy thermometer to ensure chocolate doesn’t overheat (max 85°C/185°F).
Best served at 55°F (13°C) with chocolate shavings or citrus zest garnish.
Can be prepared up to 24 hours in advance.
