Description

A comforting French gratin featuring Swiss chard, a creamy fresh cheese base, béchamel sauce, and a golden cheese crust. A family-friendly dish that balances heartiness and elegance.


Ingredients

Scale

1 kg Swiss chard (fresh, with vibrant green leaves and stems)
100 g fresh cheese (e.g., St. Moret or petite faisselle)
200 ml heavy cream
100 g grated cheese (e.g., Gruyère, Emmental, or Comté)
1 clove garlic (finely chopped)
2 tbsp olive oil
Salt to taste
Freshly ground black pepper
Pinch of nutmeg (optional)


Instructions

Wash Swiss chard leaves and stems. Cut stems into 2-3 cm pieces and leaves into coarse pieces.
Blanch stems in salted water for 15 minutes until tender. Drain thoroughly.
Sauté garlic in olive oil until fragrant. Add Swiss chard leaves and cook until wilted.
Mix fresh cheese, cream, and a splash of salt to create a base layer in a casserole dish.
Layer blanched stems and sautéed leaves over the base.
Sprinkle grated cheese atop for a golden crust.
Bake at 180°C (350°F) for 30-35 minutes until bubbly and golden.

Notes

Use finest quality olive oil and fresh chard for best flavor.
Pair with crusty French bread.
Store leftovers in an airtight container for up to 3 days.
