Description
This French classic showcases tender Swiss chard layered with creamy custard and melted cheese. A comforting, rustic dish with a balance of earthy blettes and rich fromage.
Ingredients
1 bunch Swiss chard (1 kg, separated into stems and leaf blades)
1 medium onion
1 garlic clove, minced
200 ml heavy cream
100 g grated cheese (emmental, comté, or gruyère)
3 tbsp butter or olive oil
1 tsp salt
1/4 tsp ground black pepper
Pinch grated nutmeg (optional)
Instructions
Wash chard thoroughly. Separately blanch stems in salted water for 3-4 minutes, then add leaf blades and cook 1-2 minutes. Drain.
Sauté onion and garlic in butter/oil until translucent.
In a bowl, mix blanched chard with cream, salt, pepper, and nutmeg.
Transfer to a greased gratin dish, top with grated cheese.
Bake at 190°C (375°F) for 25-30 minutes until golden and bubbly.
Notes
Use blanching water for enhanced flavor absorption
Add garlic if desired
Freshly grated cheese melts best
