Description

A French dessert featuring a light sponge cake layered with mascarpone cream and fresh strawberries. Perfect for celebrations or a comforting treat.


Ingredients

Scale

500g fresh strawberries (plus extra for garnish)
3 large eggs
120g granulated sugar (principal) + 2 tablespoons granulated sugar (for syrup)
100g all-purpose flour
1 teaspoon baking powder
250ml heavy cream (35% fat)
250g mascarpone cheese
1 teaspoon vanilla extract
50ml light sugar syrup (water + sugar)
1/2 cup buttermilk (optional, for chantilly texture)


Instructions

Preheat oven to 180°C. Butter and flour a 20cm springform pan
Whisk eggs and 120g sugar until doubled in volume
Gently fold in sifted flour and baking powder
Bake for 25-30 minutes until golden
Prepare chantilly: chill referred, add mascarpone and vanilla
Blend in whipped cream
Slice cake horizontally, brush with syrup
Layer with half the chantilly and strawberries
Top with remaining cake and chantilly, refrigerate 2 hours

Notes

Use ripe strawberries
Allow cake to cool completely before slicing
Lightly zest strawberries for extra flavor
Can be assembled 4 hours ahead but serve chilled
