A Provençal dish featuring cherry tomatoes baked into a creamy custard base. Simple to prepare, this sunny, mozzarella-like texture complements Mediterranean flavors perfectly for a refreshing family meal.
Ingredients
500 g cherry tomatoes
3 large eggs
250 ml whole milk
100 g all-purpose flour
2 tbsp olive oil
1 tsp salt
1/4 tsp black pepper
1 tsp herbs de Provence
1 tsp sugar (optional)
50 g grated cheese (optional)
Instructions
Wash and halve larger cherry tomatoes, leave smaller ones whole
In a bowl, whisk eggs, milk, flour, salt, pepper, herbs de Provence, and optional sugar
Add olive oil and stir to combine
Preheat oven to 200°C (375°F)
Pour mixture into greased ovenproof dish (10-12 inch diameter)
Arrange cherry tomatoes in single layer on top
Bake 35-40 minutes until golden and puffed
Sprinkle optional grated cheese on top during last 10 minutes
Let rest 10 minutes before slicing
Notes
Use 10-12 inch oven-safe skillet for even browning
Let rest before serving for cleaner slices
Best served warm
