A classic French summer dessert featuring fresh strawberries, light cream, and airy biscuits. Perfect for gatherings, this no-bake charlotte combines juicy fruits and whipped cream in a charming mold.
Ingredients
1 kg fresh strawberries
24–30 biscuits à la cuillère (boudoirs)
500 ml heavy cream
100 g powdered sugar
1 tsp vanilla extract
Optional fruit juice for soaking biscuits (4 tbsp)
Instructions
Wash, hull, and dice strawberries, reserving a few whole for decoration.
Ensure mold is clean and lined if needed.
Place half the biscuits in the mold, optionally soaking in fruit juice or syrup.
Whip cold cream with sugar and vanilla until stiff.
Fill mold with alternating layers of biscuits, cream, and strawberries until full.
Top with whole strawberries, cream, and a biscuit lid.
Chill for at least 2 hours before serving.
Notes
For best results, use fully chilled cream and bowl.
Soaking biscuits in light syrup or juice prevents dryness.
Adjust sugar to taste—fresh summer strawberries can be naturally sweet.
Can refrigerate overnight for firmer structure.
