Ingredients
2 1/4 cups all-purpose flour
1 3/4 cups powdered sugar
1 cup softened unsalted butter
3 medium eggs
1/2 cup whole milk
1 package baking powder
1 teaspoon vanilla extract
2 tablespoons unsweetened cocoa powder
1 pinch of salt
Instructions
Preheat oven to 350°F (180°C)
Butter and flour a standard loaf pan
In a large bowl, cream softened butter with powdered sugar until light and fluffy
Add eggs one at a time, beating well after each addition
Mix in vanilla extract and 1 teaspoon of the cocoa powder into one half of the batter
Mix milk and remaining 1 1/2 cups flour into the other half of the batter
Pour both batters into prepared pan in alternating layers
Use a butter knife to create the marbled effect by gently swirling the two batters together
Bake for 45 minutes or until a toothpick comes out clean
Notes
Use room temperature eggs for better emulsification
Let the cake rest in the pan for 5-10 minutes before removing
Store in an airtight container for up to 3 days
Can be served with a dusting of powdered sugar or a dollop of fresh cream
