Mamie Julia’s classic homemade brownie recipe offers a rich, moosey texture and intense chocolate flavor. A family-favorite dessert perfect for cozy gatherings.
Ingredients
200 g bitter chocolate (50% cacao, pâtissier quality)
150 g softened unsalted butter
150 g powdered sugar (or light brown sugar for a richer flavor)
3 large eggs, at room temperature
100 g all-purpose flour (T45/T55)
1 tsp vanilla extract (optional)
Pinch of salt
Instructions
Preheat oven to 180°C. Grease and flour a 20×20 cm square baking dish.
Melt chocolate and butter in a bain-marie or microwave in 30-second intervals until smooth. Let cool slightly.
Whisk eggs, then stir in sugar and vanilla (if using).
Slowly mix melted chocolate-butter into eggs. Fold in flour and salt.
Pour batter into prepared dish. Smooth the top.
Bake for 25-30 minutes until toothpick inserted in center comes out with a few moist crumbs.
Let cool completely before cutting into 8 squares.
Notes
Use parchment paper in the baking dish for easy release
For a finer texture, sift flour into the batter
Storage: Airtight container for up to 3 days
Best served at room temperature to maintain moisture
