Ingredients

2 medium courgettes, cut into cubes
2 bell peppers (mixed colors), cored and cut into pieces
1 medium aubergine, cut into cubes
1 pint cherry tomatoes, halved
1 large red onion, cut into large quarters
23 garlic cloves, minced
4 tablespoons extra virgin olive oil
2 teaspoons herbs de Provence (or thyme + rosemary mixture)
Salt, to taste
Black pepper, to taste
810 wooden or metal skewers


Instructions

Soak wooden skewers in water for 15 minutes (if using). Cut vegetables into uniform pieces. In a large bowl, toss with olive oil, garlic, herbs de Provence, salt, and pepper. Thread vegetables onto skewers in a repeating color pattern (if desired). Preheat grill to medium-high heat. Grill skewers for 10-15 minutes, rotating occasionally, until vegetables are softened and slightly charred. Serve warm.

Marinate vegetables for 15 minutes for deeper flavor.
