Ingredients
4 zucchini, cubed into 2–3 cm tronçons
2 red/2 yellow peppers, diced
150g cherry tomatoes, halved
2 red onions, quartered
200g button mushrooms, halved
4 tbsp extra virgin olive oil
2 garlic cloves, minced
1 tbsp dried herbs de Provence
Salt to taste, preferably fleur de sel
Freshly ground black pepper
8–10 wooden or metal skewers
Instructions
Wash and prep all vegetables as specified
Combine olive oil, minced garlic, herbs, salt, and pepper in a bowl
Toss vegetables in marinade until evenly coated (10 mins)
Thread skewers, alternating vegetables for vibrant plating
Soak wooden skewers in water 30 mins before grilling
Preheat grill to medium-high (200°C/390°F)
Grill skewers 8-10 minutes, turning occasionally until charred
Notes

Use seasonal vegetables like bell peppers, eggplant, or corn
Serve with lemon wedges or crusty bread
